The Best Jack-o-Lantern Sugar Cookies

I really love these super soft sugar cookies so much! They are perfectly soft and not terribly sweet like some sugar cookies can be. And they make a LOT so be prepared! I usually freeze the rest of the dough in a freezer bag and use whenever I need it. It’s good for up to 6 months if stored properly. See below for the recipe.


I N G R E D I E N T S

ingredients for Dough:

2 cups softened butter (I use unsalted but you can use either)

6 eggs

2 cups sugar (heaping)

2 teaspoon vanilla (I add a little extra)

2 teaspoon almond extract (I add a little extra)

6 teaspoon baking powder

7 cups flour (I don't like mine too dry, I usually end up only using 5-6 cups of flour, your dough should still be a little sticky)


I N S T R U C T I O N S

PREHEAT OVEN 375 degrees | BAKE for 6-7 mins

1. Mix wet ingredients with sugar then slowly add baking powder and slowly add flour.

2. Mix well (I love to use this Kitchen Aid mixer)

3. Refrigerate dough for 30 minutes

4. Roll-out dough on floured surface. I used pumpkin cookies cutters, but you can use whatever you like. While you are rolling out the first batch, put the cookie dough back in the fridge to stay cool. The dough is really tacky and this helps keep the temp down.

5. Once you are ready to transfer the dough to the cookie sheet, dip your spatula in the flour bag and then slide under cookie. When cookie dough is super tacky and fragile, I love doing this. I helps the cookie separate from the dough very easily and transfers to the sheet.

6. Bake for *6-7 minutes at 375 on a parchment paper lined cookie sheet. (In my oven I only cook them for 5-6 minutes. *I like them to be extra soft and they will continue to cook a bit after you pull them out, DON'T let them get golden brown).

1 pound cream cheese *(2 sticks)

3/4 pound unsalted butter at room temperature *(3 sticks of 1/2 cubes softened butter)

1 teaspoon vanilla

1/2 teaspoon almond extract

1 1/2 pounds powdered sugar

*Mix together in mixer then add your food coloring of choice and decorate! I did a couple of different colors to make it festive! And added a Jack-o-Lantern face because fall is almost here!
